Crisp biscuits

Serves 4 Preparatio­n time 10 minutes plus resting time Baking time 15 minutes I really can’t get enough of these biscuits. They’re also delicious with cheese and green figs or honey.

You need

• 150g cake flour • 75g Parmesan cheese, grated • 1 teaspoon (5ml) salt • 125g soft butter • ¼ cup (60ml) flaxseed/linseed

This is how

Place all the ingredient­s in an electric mixer and let the machine run until everything is just combined – don’t overmix. Place the dough between two pieces of clingfilm and place on a small baking tray or bread board. Roll out the dough between the clingfilm to a thickness of ½-1cm – make sure that it is of even thickness all over. Place the baking tray or board in the freezer and leave to rest for 30 minutes.

Heat the oven to 180˚C. Remove the top layer of clingfilm and carefully turn the dough onto a baking tray sprayed with non-stick cooking spray. Bake for 10-15 minutes or until golden brown. Set aside to rest and turn crispy.

Break into large pieces and serve right away, or store in an airtight container (not in the fridge) for no more than a week. If you prefer squares or triangles, cut the dough before baking.
