Gin and spanspek sor­bet

Serve this re­fresh­ingly dif­fer­ent sor­bet in small por­tions as a palate cleanser be­tween cour­ses, or as a dessert.

Makes 1ℓ Prepa­ra­tion time 15 min­utes plus freez­ing time

YOU NEED

• 1 very ripe spanspek, peeled and seeds re­moved • 1/3 cup (80ml) gin • juice of 1 lime • creamy Dan­ish feta cheese, to serve

THIS IS HOW

Cube the spanspek and pulp in a food pro­ces­sor, to­gether with the gin, lime juice and a pinch of salt. Scrape the mix­ture into a dish and freeze un­til solid (or use an ice-cream ma­chine).

Serve small balls of sor­bet with cheese of your choice – I find creamy Dan­ish feta works best.
