Flatbread with spanspek and Parma ham
The classic combination of spanspek and Parma ham was the inspiration for this flatbread. It’s delicious with a glass of cold white wine as a light lunch or starter.

YOU NEED
FOR THE FLATBREAD • 2 cups (500ml or 240g) cake flour • ½ teaspoon (2,5ml) salt • ½ teaspoon (2,5ml) olive oil, plus
extra for sprinkling • ½ cup (125ml) water
FOR THE TOPPING • 4-5 thin slices spanspek, peeled and seeds removed • 125g Parma ham • 1 large ball of fior de latte (fresh
mozzarella cheese), torn into strips • a handful of sweet basil leaves • 8 pecan nuts, finely chopped • ¼ cup (60ml) olive oil • 1 garlic clove, finely chopped • sea salt flakes
THIS IS HOW
MAKE THE FLATBREAD Mix all the ingredients for the flatbread and knead the dough for 15 minutes in a stand mixer.
Heat the oven to 200°C. Sprinkle flour onto a baking tray. Divide the dough in two and roll out each ball thinly into an oval shape. Place the dough on the prepared baking tray, sprinkle extra olive oil over each flatbread and bake them for 10-15 minutes or until golden brown.
Arrange the spanspek, Parma ham and strips of fior di latte on the flatbreads. Sprinkle the basil leaves, nuts, freshly ground black pepper to taste, olive oil, garlic and salt flakes on top and serve immediately. >
