Provolone has a smoky flavour and melts well – perfect for a braaibroodjie!
• 350 g steak, sliced in thin strips • salt and black pepper • 15 ml olive oil • 30 ml Worcestershire sauce • 60 ml butter • 1 onion, thinly sliced • 1 green pepper, in strips • 125 g mushrooms, sliced • 4 panini • mayonnaise, to spread • 250 g provolone, thinly sliced
1 Season the steak with salt and pepper. Heat the oil in a heavybottomed pan over a high heat and sear the strips for 1 minute. Remove the meat from the pan. Add the Worcestershire sauce to the strips, stir through and set aside. 2 Melt the butter in the pan and sauté the onion until soft. Add the green pepper and mushrooms and sauté the mixture until cooked. 3 Cut the panini in half. Spread mayonnaise on each half and add a few slices of cheese. Put the meat strips on top, followed by the veggies and more cheese. 4 Turn on the oven’s grill. Put the open sandwiches on a baking sheet and grill them for a few minutes until the cheese has melted and has started to brown. Serve hot.
TIP When you’re camping, use this recipe to make braaibroodjies: Close the panini and use a hinged grid to cook the sandwich over the fire until the cheese has melted. You can also use leftover braai meat instead of steak.
