Brown rice salad with apricots

TIP The flavoursom­e lamb mince also makes delicious meatballs if you don’t have time to freeze the log overnight.

Serves 6

Cooking time 25 minutes

You need

• 250 ml brown basmati rice

• 1 small white onion, finely chopped

• 12 soft dried apricots

• 1 green pepper, seeds removed and finely chopped

• 1 tablespoon medium-hot curry powder

• 1 cup creamy mayonnaise

• salt and black pepper, to taste

Here’s how

1 Cook the rice according to the instructio­ns on the packet or follow this method: Soak the rice in cold water for 30 minutes. Drain and transfer the soaked rice to a big pot. Add 6 cups boiling water and 1 teaspoon salt. When the water comes to a boil, lower the heat, close the lid and simmer the rice for 20 minutes. Drain and steam over a low heat for 5 – 10 minutes. Drain any remaining water and let the rice cool down a little.

2 Mix the rest of the ingredient­s with the cooked rice and serve the salad at room temperatur­e.

TIP If you don’t like dried apricots, use tinned peaches instead. For a lighter sauce, replace half of the mayonnaise with yoghurt.
