Potato salad

Serves 6 as a side dish

Preparatio­n time 15 minutes

Cooking time 10 minutes

You need

• 1 kg baby potatoes, washed

• 1 small red onion, thinly sliced

• 3 sprigs of flat-leaf parsley, chopped

• rocket leaves (optional)

For the salad dressing

• 4 tablespoon­s olive oil

• 2 tablespoon­s fresh lemon juice

• 1 teaspoon whole-grain mustard

• 4 anchovy fillets, chopped

• salt and freshly ground black pepper, to taste

• half a clove of garlic, finely chopped

Here’s how

1 Boil the potatoes in salt water until soft. Drain and set aside until the potatoes are cool enough to handle.

2 Put all the ingredient­s for the salad dressing in a jar. Close the lid and shake until the ingredient­s are well combined.

3 Cut the potatoes in half and mix them with half of the salad dressing, the red onion and parsley. Scatter over the rocket and the rest of the salad dressing just before you serve. The salad is delicious at room temperatur­e.

TIP To make sure the salad dressing doesn’t settle on the bottom of the bowl, stir the salad just before serving. If you don’t have rocket and parsley, you can also use basil and dill.
