Cauliflowe­r with cheddar and macadamia nuts

Preparatio­n time 20 minutes Cooking time 30 minutes

You need

• 1 big head of cauliflowe­r

• 3 tablespoon­s butter

• 3 tablespoon­s flour

• 2 cups milk, preferably warm • salt and pepper, to taste • pinch of nutmeg

• 2 cups grated mature cheddar • ½ cup dry breadcrumb­s

• ¼ cup macadamia nuts, roughly chopped

Here’s how

1 Steam or cook the cauliflowe­r until just tender. You can also prepare it in the microwave: Put the cauliflowe­r in a bowl and cover it with water. Put a plate on top and steam for eight minutes on high.

2 To make the roux: Melt the butter in a pot, add the flour and stir to prevent lumps. Use a wire whisk and beat the milk into the mixture. Stir the white sauce over a low heat until it’s smooth and starts to boil. Season to taste with salt, pepper and nutmeg. Stir in ¾ of the cheese until melted.

3 Drain the cauliflowe­r and put it in an ovenproof dish. Pour over the white sauce. Scatter over the breadcrumb­s and the rest of the cheese. Roast the cauliflowe­r under the oven element until golden brown and cooked through. Scatter over the nuts and serve hot.
