Frozen fruit mojitos
Serves 4
Preparation time 15 minutes, plus time to freeze
You need
• 1 cup finely chopped banana
• 1 cup finely chopped strawberries • 1 cup mango juice
• 2 teaspoons sugar
• 2 shots (60 ml) lemon or lime juice
• handful of mint leaves
• 4 shots (120 ml) white rum
• ice cubes
• soda water

1 Combine all the ingredients except the ice cubes and soda.

Put the mixture in Ziploc bags, squeeze out the air and seal. Freeze until hard. (If you want to travel with the frozen fruit, seal it in an extra bag to prevent leaks.)
2 Use a jug blender that can crush ice. Add the fruit to the blender, with a handful of ice and just enough soda water to get the blades moving. Blend until the mojito has the texture of a creamy sorbet. Add more lime, rum or mint to taste. Serve in glasses with reusable straws.

• 3 cups cake flour, plus extra • 1 teaspoon bicarbonate of soda
• ½ cup light brown sugar
• 1 teaspoon ground ginger (or to taste)
• 125 g butter, softened
• ½ cup golden syrup • Smarties (optional)
Here’s how
1 Preheat the oven to 180° C.
Put all the ingredients, except the Smarties, in a food processor and pulse the mixture until a dough forms. Dust a clean work surface with flour to prevent the dough from sticking to it before adding the dough. Knead lightly until smooth. Unlike bread dough, biscuit dough shouldn’t be overworked.
2 Shape the dough into a disc and use a rolling pin to flatten it until it’s about 7 mm thick. Dust the work surface with flour as needed. Use a biscuit cutter to cut out the gingerbread men and put them on baking sheets lined with baking paper.
3 Decorate the biscuits with Smarties and bake each sheet for about 10 minutes or until the biscuits are golden brown. Let the biscuits cool down and store them in airtight containers.
The gingerbread men are delicious served with ice cream and chocolate sauce or a shot of dessert wine after a good meal.
