Chipotle chilli burgers

The pork sausages already contain salt and binding ingredient­s so it’s easy to make a delicious patty.

You need

• 500 g pork sausages

• 250 g beef mince

• 2 – 3 chipotle chillies, finely chopped

• 1 teaspoon smoked paprika • ½ teaspoon cayenne pepper • olive oil

• 1 avocado

• cheddar

Here’s how

1 Remove the meat from the sausage casings and mix it with the beef mince, chillies, smoked paprika and cayenne pepper using your hands.

2 Divide the mince mixture into six even-sized balls. Flatten the balls with your hand until they’re slightly bigger than the bread rolls.

3 Heat a cast iron pan and add a little olive oil. Fry the patties and only turn them over once the meat starts to form a brown crust at the bottom. Fry the patties for about 3 – 4 minutes a side or to your taste.

4 Serve with the braai marinade, jalapeño-andmielie fritters (recipes on page 16), smashed avocado and a slice of cheddar.
