Garlic bread with chicken and mushrooms

You need

• 2 tablespoon­s olive oil

• 1 green pepper, in strips

• 250 g mushrooms, sliced

• salt and ground black pepper, to taste

• 2 cups shredded cooked chicken

• ½ cup butter, at room temperatur­e

• 6 cloves of garlic, finely chopped

• 1 ciabatta bread, in 1,5 cm-thick slices

• 400 g mozzarella, in slices

Here’s how

1 Preheat the oven to 200° C. Heat the olive oil and fry the green pepper and mushrooms until cooked. Season with salt and pepper and add the chicken.

2 Mix the butter and garlic together. Spread the butter on one side of each slice of bread. Add the chicken mixture and a few slices of cheese in between the buttered slices. Arrange the slices upright on two sheets of foil, with the dull side of the foil facing out. Spread the extra butter over the top of the loaf and wrap tightly in the foil. Bake for about 25 minutes or braai over the coals until the bread is crisp and the cheese has melted.
