Lemon slices

You need For the crust
• 1 cup (250 g) cold butter, cubed
• ½ cup sugar
• 2 cups flour
For the filling
• 1½ cups sugar
• ¼ cup flour
• 4 eggs
• juice and grated peel of 2 lemons
• icing sugar
Here’s how
1 Preheat the oven to 175° C. Grease a 22 x 33 cm oven tray with cooking spray. Line the tray with baking paper – the paper should hang over the rim by 1 – 2 cm. (This makes it easier to remove the lemon slices from the tray.)
2 Pulse the butter, sugar and flour in a food processor until well mixed. Transfer the mixture to the baking tray and flatten with your hands to create an even crust. Bake for 20 – 25 minutes or until light brown. Remove the tray from the oven and let it cool down.
3 Combine all the ingredients for the filling, except the icing sugar, until the sugar has dissolved. Set aside for 10 minutes. Beat the mixture and pour it over the crust.
4 Bake for 20 – 25 minutes or until the slices turn golden and the filling starts to set. Remove the tray from the oven and put it in a cool spot in your kitchen (not the fridge) until completely set. Sprinkle with icing sugar and grated lemon peel. Cut into slices and serve.
