Rice pudding with apples and meringue

You need
• 1 tablespoon butter
• ½ cup caramel sugar
• 2 apples, peeled and cut into pieces
• ¼ cup boiling water
• 2 tablespoons lemon juice • pinch of ground cinnamon • ½ cup cooked rice
• ½ cup milk
• 2 eggs, separated
Here’s how
1 Preheat the oven to 160° C. Melt the butter and 1 tablespoon of sugar in a pan. Add the apple pieces and fry for a few minutes until they start to change colour. Stir in the boiling water, lemon juice and cinnamon. Close the lid and steam the apples for a few minutes until they’re soft and the liquid has reduced. Remove the pan from the heat.
2 Mix the rice, milk, 2 tablespoons of sugar and egg yolks together. Scoop half of the rice mixture into a greased oven dish. Spoon the apple mixture on top, followed by the rest of the rice mixture.
3 Beat the egg whites until soft peaks form. Beat the remaining sugar into the egg whites a spoon at a time until the mixture is smooth and glossy. Spoon the meringue on top of the pudding and bake for 15 – 20 minutes, or until the top of the meringue is caramelised.
