Marinated aubergine

Serves 6 – 8 as a side dish Preparatio­n time 35 minutes, plus 1 hour to marinate

Cooking time about 30 minutes

You need

• 3 medium-sized aubergines

• ¹/ cup olive oil

• 3 bay leaves, crushed

• juice of 1 small lemon and about 3 tablespoon­s grated zest

• 5 whole cloves

• 2 tablespoon­s balsamic vinegar • pinch of sugar

• 3 tablespoon­s currants

• 2 red chillies, chopped
