So­lu­tion: Switch up the com­po­nents. Start with non-starchy veg­eta­bles, but try a new leafy green (kale or lamb’s let­tuce); cau­li­flower, Brus­sels sprouts or broc­coli; and brin­jals, mush­rooms, pep­pers, to­ma­toes, cu­cum­ber, cel­ery, sugar snap peas, ar­ti­chokes, fen­nel and as­para­gus – any or all of th­ese will work as a base. Add two scoops of a starchy veg, whole­grain or pulse: sweet po­ta­toes, but­ter­nut, quinoa, beans, lentils, chick­peas or edamame beans. For a pro­tein, re­place steak or chicken with canned salmon, tuna or sar­dines. Sprin­kle on nuts, seeds, sliced avo­cado and crum­bled cheese for flavour. Last, try fruit like goose­ber­ries, peaches and straw­ber­ries, which are amaz­ingly fresh right now.
