Pome­gran­ate-and-chilli mar­garita

Makes 1 cock­tail

100ml sugar syrup

1T orange zest

1T chilli, finely chopped 40ml Mex­i­can agave tequila 50ml fresh lime juice

40ml pome­gran­ate juice lime wedge, to gar­nish

1. Make the sugar syrup by mix­ing equal amounts of sugar and wa­ter, to­gether with the orange zest and chilli, over a low heat un­til the sugar has dis­solved. Re­move from the heat, strain and set aside to cool. 2. In a cock­tail shaker filled with ice, add the tequila, fresh lime and pome­gran­ate juice, and the cooled sugar syrup. Shake well.

3. Pour into a large wine glass and gar­nish with a slice of fresh lime and chilli (op­tional).
