Makes 1 cocktail
100ml sugar syrup
1T orange zest
1T chilli, finely chopped 40ml Mexican agave tequila 50ml fresh lime juice
40ml pomegranate juice lime wedge, to garnish
1. Make the sugar syrup by mixing equal amounts of sugar and water, together with the orange zest and chilli, over a low heat until the sugar has dissolved. Remove from the heat, strain and set aside to cool. 2. In a cocktail shaker filled with ice, add the tequila, fresh lime and pomegranate juice, and the cooled sugar syrup. Shake well.
3. Pour into a large wine glass and garnish with a slice of fresh lime and chilli (optional).
