AN­CIENT GRAIN OATS

Serves 1

1 cup cooked grains (bar­ley, spelt

berries, quinoa, bul­gur, wild rice) 1T quick oats

1/2 cup coconut milk

1/2 cup coconut wa­ter

1 cup wa­ter

6 slices fresh gin­ger

1 cin­na­mon stick, toasted 4 car­damom pods, toasted

1/2 stick lemon­grass, chopped 1T brown sugar

1 pinch salt

2T but­ter

1 kiwi, chopped

2T pis­ta­chios, chopped

1T toasted hemp seeds 1T pome­gran­ate seeds

1. Night be­fore: com­bine coconut milk and coconut wa­ter, wa­ter, gin­ger, car­damom and lemon­grass. In­fuse for 24 hours, then strain. 2. In a saucepan, com­bine grains, in­fused coconut milk, salt, oats and brown sugar over medium heat. Cook un­til thick and por­ridge like, ap­prox­i­mately 4 min­utes. 3. Turn off heat and stir in but­ter un­til melted. Serve in a bowl gar­nished with kiwi, pis­ta­chios, pome­gran­ate and hemp seeds.
