74), cola-beef is right on trend. Tra­di­tion­ally, the is­lan­ders cooked their beef in lo­cal cola; the fizz and the sugar ten­derises tough cuts and makes a sticky sauce at the end. Ideal to serve as a slider with some pineap­ple slaw. Serves 6

1.5 to 2kg beef brisket on the bone

2T olive oil

1T smoked dried chilli flakes 1T whole bird’s eye chill­ies 1t smoked pa­prika

1 red onion, finely sliced
