Roasted pork chops with pineapple salsa

• 4 large pork chops, rind on • oil • sea salt flakes SALSA • 1 red onion, finely chopped • 1 pineapple, peeled and diced • 2 cloves garlic, chopped • 1 chilli, finely chopped • juice and zest of 1 lemon

1 Make the salsa Place all the salsa ingredient­s in a jar, close with a lid and shake well. Season with a little salt and set aside.

2 Preheat the oven. Score the rind with a sharp knife, then brush it with the oil and rub in some sea salt flakes. Also brush the pork chops well with oil and place them on a wire rack in a roasting pan. Bake for 20 minutes or until the chops are cooked and the rind is crispy. Serve with the salsa.
