Chicken and tomato soup

• 6 chicken bangers • 15ml olive oil • 2 yellow peppers, chopped • 1 clove garlic, chopped • 250ml corn kernels • 1 tin chopped tomatoes with chillies • 60ml uncooked rice • 1.5L chicken stock • fresh coriander and lime juice

1 Remove the casings of the sausages and roll the filling into balls. Heat the oil in a pot and fry the balls until golden brown. Add the peppers and garlic and cook for another minute until glossy.

2 Stir in the corn, tomato, rice and stock and simmer until the rice is cooked (about 15 minutes). Season to taste with salt and pepper, coriander and lime juice.
