Variation # 3 Cassata cheesecake
Finely chop a mixture of dates, candied ginger, candied
pineapple and glacé cherries to make 125ml. Stir in 60ml chopped almonds. Follow the basic filling recipe, but add 5ml brandy and fold in most of the fruit mixture. Spoon into the prepared crust and sprinkle the rest of the fruit on top. Allow to set then garnish with chocolate curls.
