Marsh­mal­low fudge

We made this easy fudge in the mi­crowave – and whether it con­tains marsh­mal­lows or not, it al­ways hits the sweet spot! If you don’t like us­ing a mi­crowave, you can also make the fudge on the stove; re­mem­ber to stir con­tin­u­ously so it doesn’t burn. Enough for one 18 x 18cm pan Prepa­ra­tion time: 20 min­utes Cook­ing time: 12–14 min­utes • 125g but­ter • 1 tin (385g) con­densed milk • 60ml milk • 250ml Huletts Ic­ing Sugar • 250ml Huletts SunSweet Brown Sugar • 5ml vanilla essence • a pinch of salt • a large hand­ful of mini marsh­mal­lows

11 Melt the but­ter, con­densed milk, milk, ic­ing sugar and brown sugar in a deep mi­crowave-safe bowl in the mi­crowave for 2–3 min­utes on high. (The fudge will bub­ble up, so if the bowl is too shal­low, it will boil over.) Re­move from the mi­crowave and stir well. 4 22 Cook for 10–12 min­utes on high, stir­ring well af­ter ev­ery two min­utes. The colour will darken grad­u­ally and the mix­ture will thicken. The colour in­di­cates when the fudge is done. The strength of your mi­crowave will in­flu­ence the cook­ing time.4 Pour the fudge into the pre­pared pan and smooth it out. Sprin­kle the re­main­ing marsh­mal­lows on top and leave to cool; some of the marsh­mal­lows will melt, giv­ing the fudge a lovely tex­ture.5 Us­ing a sharp knife, cut the fudge into squares. Store in an air­tight con­tainer in the re­frig­er­a­tor – these treats make the per­fect gift for that spe­cial some­one. 33 Add the vanilla and salt, and beat the fudge briskly with a wooden spoon for a few min­utes. This step is vi­tal, oth­er­wise the fudge won’t set prop­erly. The fudge should lose its shine and pull away from the sides of the bowl. Stir about a third of the marsh­mal­lows into the fudge, sprin­kle a third on the bot­tom of a square pan lined with bak­ing pa­per and keep the rest to sprin­kle on top. 5
