Laven­der & vanilla syrup

Mix a dash of this fra­grant syrup into your G&T and gar­nish with fresh laven­der. For a re­fresh­ing sum­mer drink, try it mixed with wa­ter and a squeeze of fresh le­mon juice. Makes about 350ml Prepa­ra­tion time: 15 min­utes Cook­ing time: 35 min­utes • 500ml su­gar • 375ml wa­ter • 1 vanilla pod, split open (or 5ml vanilla ex­tract) • 10 sprigs fresh laven­der

Com­bine all the in­gre­di­ents in a pot over medium heat and stir un­til all the su­gar has dis­solved. Bring to the boil then re­duce the heat to a sim­mer and cook with­out stir­ring over medium heat for 30 min­utes. Al­low to cool be­fore pour­ing into a pretty bot­tle and seal­ing it. It’s best to keep this fra­grant syrup in the fridge.
