Lavender & vanilla syrup
Mix a dash of this fragrant syrup into your G&T and garnish with fresh lavender. For a refreshing summer drink, try it mixed with water and a squeeze of fresh lemon juice. Makes about 350ml Preparation time: 15 minutes Cooking time: 35 minutes • 500ml sugar • 375ml water • 1 vanilla pod, split open (or 5ml vanilla extract) • 10 sprigs fresh lavender
Combine all the ingredients in a pot over medium heat and stir until all the sugar has dissolved. Bring to the boil then reduce the heat to a simmer and cook without stirring over medium heat for 30 minutes. Allow to cool before pouring into a pretty bottle and sealing it. It’s best to keep this fragrant syrup in the fridge.
