PORK MINCE ON RICE
Serves 4 • Preparation time: 10 minutes Cooking time: 10 minutes
• 250ml basmati rice (white or brown)
• 30ml sesame oil
• 500g fresh pork mince
• 1 red chilli, chopped
(or to taste)
• 2 garlic cloves, finely chopped
• 4 spring onions, finely chopped
• 250ml baby spinach leaves • 30ml soy sauce
• 5ml brown sugar
• 15ml fish sauce
• a sprinkling of fresh herbs such as basil or coriander
1 Cook the rice in salted water, according to the instructions on the package. Drain and set aside.
2 Heat the oil and fry the mince until golden-brown; break up the mince continuously with a spatula.
3 Stir in the chilli, garlic and spring onions and fry for another minute or two until fragrant.
4 Lastly, stir the spinach, soy sauce, sugar and fish sauce into the hot pan and sauté until the leaves wilt. Serve immediately on the cooked rice, garnished with a sprinkling of herbs and a few edible flowers such as nasturtiums if desired.
