Fresh tuna smells like the ocean and has an attractive rich purple colour. If you can’t find fresh tuna, your next best option is freshly frozen – the fish is frozen immediately after it has been caught to preserve its fresh flavour. The colour is definitely more muted, but if you defrost it carefully and pat it dry properly, it will still make an impressive dish.
