Basic lemon vinaigrett­e

It’s so easy to make your own salad dressing with fresh citrus. Start with 30ml fresh

lemon or lime juice, 5ml honey, 5ml Dijon mustard and about 30ml soft herbs – dill and parsley are delicious but so are coriander and basil (use whatever you have in your herb garden). Blend everything together with a stick blender while gradually adding about 100ml quality olive oil.

This will form a thick, creamy emulsion. Season generously with Maldon sea salt

flakes and freshly ground black pepper.

Dilute with a little boiling water if you like, but don’t dilute the rich flavour. Taste and adapt to your liking. >>
