The growing season for waterblommetjies is from May to November. If this is your first time cooking them, here’s how to prepare them:
• If the flower is quite big, break off the twoouterleavesatthebaseasthey usually don’t soften well.
• Then break up the waterblommetjies into 4 to 6 smaller pieces, depending on the size of the flowerhead.
• Place in a large bowl, fill with water and add half a cup of salt. Let this stand for about half an hour to an hour so that any insects inside the flowers will crawl out. Rinse and blanch them in boiling water to make them more palatable. Now they’re ready for the pot!
