Five-minute gnocchi

Under R120 • Makes 2 generous servings Preparatio­n: 10 minutes • Cooking time: 8 minutes

• 500g ready-made gnocchi

• a large knob of butter

• 125ml sun-dried tomato pesto

• 2 ripe medium-sized plum tomatoes, diced

• 30ml cream or sour cream

• 80ml coarsely shredded fresh basil

• 60ml grated Parmesan

1 Bring a pot of salted water to the boil and add the gnocchi. While it is boiling, heat a small pan and melt the butter. Add the pesto and tomato and fry.

2 Using a slotted spoon, scoop out the gnocchi as it starts to float on top of the water and place in the pan with the pesto. Repeat until all the gnocchi is in the pan.

3 Add the cream to the pan mixture, stir through and heat until hot. Remove from the heat immediatel­y, stir in the basil and Parmesan, and serve with freshly ground black pepper. If you like, you can add chopped smoked ham.
