Baked broccoli chicken

• Serves 6

• Preparatio­n: 15 minutes Cooking time: 20 minutes

• ½ head broccoli, boiled or steamed

• 100g feta, crumbled

• 45ml mayonnaise

• nutmeg, to taste

• 6 chicken breast fillets

• 80ml panko breadcrumb­s

• 60ml grated Parmesan

• 30ml olive oil

• your favourite starch, to serve

1 Preheat the oven. Finely chop the broccoli and mix with the feta and mayonnaise; season with salt, pepper and nutmeg.

2 Make an incision in each chicken breast and open it up slightly. Season well with salt and pepper, inside and out, and arrange the chicken on an oiled baking tray (baking paper is optional).

3 Divide the filling between the cavities in each breast and press down lightly. Mix the crumbs, Parmesan and oil; also divide this mixture between the breasts and press down firmly. Bake for 20 minutes. Switch on the grill and grill for a few minutes until the crumbs are golden-brown. Serve with couscous, rice or (if you’re on a banting diet) cauliflowe­r mash. >>
