CLOVER CLASSIC BROWNIE CUPCAKES

Baking time: 15–20 minutes Serves: 6–12, depending on muffin tray size

INGREDIENT­S

• 100g Classic Fat Spread

• 125ml cocoa powder

• 250ml castor sugar

• 3 large eggs

• 62.5ml Classic Mayo

• 62.5ml Classic Dairy Snack, vanilla flavour

• 80g chopped dark chocolate pieces

• 500ml self-raising flour

TO SERVE

• 62.5ml Classic Custard • 500ml whipped cream • chocolate shavings/flakes

METHOD

1 Preheat the oven to 180°C.

Use a muffin tray lined with cupcake cases.

2 Melt the Classic Fat Spread and whisk in the cocoa powder. Beat in the castor sugar and eggs until well combined and thick, then beat in the Classic Mayo and Dairy Snack. Stir in the chocolate and cocoa mixture.

3 Fold in the flour and ladle the batter into the muffin tray. Bake for 15–20 minutes; allow to cool. 4 Fold the Classic Custard into the whipped cream. Top the brownies with the custard cream and garnish with chocolate flakes. Serve with sparklers for a celebratio­n!
