Oven chicken with green bean mash

Under R150 • Serves 4 • Preparatio­n: 20 minutes Cooking time: 45 minutes • Oven temperatur­e: 180°C

• 8 chicken pieces (drumsticks and thighs)

• 30ml olive oil

• 30ml BBQ spice

(your favourite)

• a large knob of butter

• 8 rashers bacon, chopped

• 1 small white onion, chopped

• 400g green beans, cut into 1cm pieces

• 2 potatoes, diced

• about 250ml water

• salt, white pepper and nutmeg, to taste

1 Preheat the oven. Using a sharp knife, make two deep incisions in each piece of chicken, through the skin to the bone. Mix with the oil and season the chicken with the spices. Bake in a single layer for about 40 minutes or until the chicken is golden-brown and cooked through.

2 Melt the butter in a saucepan and fry the bacon and onion until glossy. Add the green beans and potatoes and mix through. Stir in the water, put the lid on and simmer until the potatoes and beans are soft (about 25 minutes). Remove the lid and simmer for another 10 minutes until most of the liquid has evaporated, or drain.

3 Lightly mash the potatoes and beans with a potato masher and season to taste with salt, white pepper and a pinch of nutmeg. Serve with the chicken. You can also serve with a side of peas. >>
