Pork, noodle and chilli oil stir-fry

• 4 egg noodle nests
(about 340g)
• 30ml oil
• 200g mushrooms, chopped
• 4 baby marrows, chopped
• 8 baby corn, cut lengthwise
• 300g minced pork
• 2 garlic cloves, finely chopped
• 2cm fresh ginger, peeled and grated
• about 30ml oyster sauce
• 2 spring onions, chopped
• about 15ml chilli oil
• 30ml fresh basil or coriander
1 Cook the noodles, according to the instructions on the packet, until al dente. Drain and set aside.
2 Heat the oil in a heavy-bottomed pan and stir-fry the vegetables until browned. Add the minced pork, garlic and ginger, and stir-fry until the meat has broken up into smaller granules and is cooked through.
3 Stir in the oyster sauce and spring onions and mix through.
Add the noodles and chilli oil and stir-fry for a minute or two. Season with soya sauce to taste and sprinkle with fresh herbs.
