100ml olive oil juice of 1 le­mon 1T bal­samic vine­gar 1t sugar large hand­ful of

sum­mer greens 12 slices Parma ham

or pro­sciutto medium bunch red grapes 200g Gor­gonzola 100g pe­can nuts, toasted 3 radishes, thinly sliced nas­tur­tiums

Serves 6

Com­bine the olive oil, le­mon juice, bal­samic vine­gar and sugar to make the dress­ing, and set aside.

Ar­range the sum­mer greens, Parma ham, grapes, Gor­gonzola and pe­can nuts on a plat­ter, and gar­nish with radish slices and nas­tur­tiums. Driz­zle the dress­ing over the salad and serve.
