SALSA MACHA WITH FRESH TOMATOES

200ml olive oil 50g sun­flower seeds 9 gar­lic cloves, peeled and sliced A thumb of fresh gin­ger, peeled and finely chopped 2 whole chillis, sliced and de­seeded 30g ca­pers 30g dried sul­tanas 20g fresh basil stems, finely chopped 1T sesame seeds 50ml sherry vine­gar 6 medium, fresh tomatoes

In a pan, heat the olive oil and fry the sun­flower seeds and gar­lic until golden. Add the gin­ger and chilli and fry for 20 sec­onds. Add the ca­pers, sul­tanas, basil stems and sesame seeds, and cook until the sul­tanas swell. Deglaze with the sherry vine­gar and serve im­me­di­ately over freshly sliced tomatoes.
