½ tsp turmeric, ground pinch of ste­via pow­der juice of 1 lime 15g gela­tine pow­der 2½ cups wa­ter mint sprigs, to gar­nish

1. Oil a 15x15cm bak­ing tin. Mix the turmeric, ste­via and lime juice in a small bowl. Add the gela­tine to ¼ cup wa­ter in an­other small bowl and let it stand un­til it has set. 2. Fill a small pot with 2 cups wa­ter. Add the turmeric mix­ture and the gela­tine. Bring the liq­uid to a sim­mer and stir un­til the gela­tine has dis­solved. 3. Pour the jelly into the pre­pared tin and chill it in the fridge to set. 4. To serve: Cut the jelly into squares or cir­cles and serve them chilled, gar­nished with mint.
