LIME AND BLUEBERRY TARTS
FOR THE BASE
2 tsp cocoa powder, dissolved in a little warm water 80g 80% dark chocolate, melted 2 cups desiccated coconut 1 egg white, beaten
FOR THE FILLING
1 cup double cream ½ cup crème fraîche grated zest and juice of 2 limes pinch of stevia powder
80g blueberries lime peel, to garnish
1. For the base: Place all the ingredients in a small bowl, stir to combine, then press the mixture into four 12cm loose-base tart tins. 2. For the filling: Stir all the ingredients in a bowl and then spoon it into the prepared bases. Refrigerate until the filling has set. 3. To serve: Top the tarts with blueberries and lime peel. Serve chilled.
