APPLE, THanYdM VANILLA NONALCOHOL­IC DRINK

• 5g fresh mint leaves • juice of 2 limes • pinch of stevia powder • seeds from 1 vanilla pod • 1 red apple, finely

sliced • 1L coconut water,

chilled • 2g fresh thyme sprigs 1. Place a mint leaf into each hollow of an ice tray, fill the tray with water and freeze it. 2. Stir to combine the lime juice, stevia and vanilla seeds in a large jug, then add the apple slices and frozen mint ice cubes. Add the chilled coconut water and stir again to combine. 3. To serve: Garnish the jug with fresh thyme, then pour the drink into glasses and serve immediatel­y.
