There’s a debate about the most hygienic materials for cutting boards. We’re not keen on plastic as the cracks and crevices store bacteria – E. coli and Salmonella particular­ly. Rather opt for bamboo or wood. Although these boards also get cracks and crevices, the natural materials have antibacter­ial properties. Heat can damage bamboo and wood, and excessive contact with water can cause the boards to warp and split. Wash them in soapy warm water and dry them immediatel­y (don’t let them soak). Oil them frequently to maintain a new look.
