BROC­COLI SALAD WITH AV­O­CADO & STRAW­BER­RIES

SERVES 4 • 1 head of broc­coli, cut into

flo­rets • 2 baby gem let­tuce, leaves

sep­a­rated • 2 av­o­ca­dos, peeled and

sliced • 100g straw­ber­ries, halved • 80g pe­can nuts, toasted and

chopped FOR THE DRESS­ING • 1½ tbsp bal­samic vine­gar • ½ cup ex­tra-vir­gin olive oil • Hi­malayan salt and black

pep­per 1. Heat a pot of wa­ter, blanch the broc­coli, then place in icecold wa­ter, re­move and drain. Place the flo­rets onto a plat­ter with the other leaves. Top with av­o­cado, straw­ber­ries and nuts. 2. For the dress­ing: Whisk bal­samic and olive oil. Sea­son well. 3. To serve: Driz­zle the dress­ing over the salad and toss.
