BROCCOLI SALAD WITH AVOCADO & STRAWBERRIES
SERVES 4 • 1 head of broccoli, cut into
florets • 2 baby gem lettuce, leaves
separated • 2 avocados, peeled and
sliced • 100g strawberries, halved • 80g pecan nuts, toasted and
chopped FOR THE DRESSING • 1½ tbsp balsamic vinegar • ½ cup extra-virgin olive oil • Himalayan salt and black
pepper 1. Heat a pot of water, blanch the broccoli, then place in icecold water, remove and drain. Place the florets onto a platter with the other leaves. Top with avocado, strawberries and nuts. 2. For the dressing: Whisk balsamic and olive oil. Season well. 3. To serve: Drizzle the dressing over the salad and toss.
