BA­CON-WRAPPED CHEESE WITH STRAW­BERRY SALSA

SERVES 4

• 200g ba­con strips

FOR THE FILL­ING

• 150g cream cheese • 30g feta cheese, crum­bled • 2 cloves gar­lic, chopped • grated zest of ½ orange

FOR THE SALSA

• 100g straw­ber­ries,

finely chopped • 5g pars­ley • 3 tbsp ex­tra-vir­gin olive oil 1. Place the ba­con strips on a sur­face. Mix to­gether the cream cheese, feta cheese, gar­lic and orange zest. Place dol­lops of the mix­ture at the base of each strip and roll up the ba­con strip tightly. Re­peat with all the ba­con and fill­ing. 2. Heat a fry­ing pan and cook the ba­con parcels un­til golden and crispy, then set aside and drain on pa­per towel. 3. For the salsa: Mix to­gether all the in­gre­di­ents and sea­son. 4. To serve: Serve warm, topped with the straw­berry salsa.
