BRAAI PIZZA BREAD

FOR THE DOUGH 180g grated mozzarella 45g cream cheese 1 egg, lightly whisked 65g almond flour ½ tsp salt

FOR THE TOMATO SAUCE 2 tbsp olive oil 1 onion, chopped 2 cloves of garlic, finely chopped ½ stick of celery 2x400g tins whole tomatoes 40g tomato paste a handful of fresh basil, chopped

FOR THE TOPPINGS 1 red pepper, deseeded and cut into chunks 1 yellow pepper, deseeded and cut into chunks 1 green pepper, deseeded and cut into chunks 2 tsp olive oil 100g mozzarella, sliced 125g chorizo, sliced rocket leaves to garnish

1. For the dough: Place the mozzarella and cream cheese in a microwave-proof dish. Microwave on full power for 2 minutes or until the cheeses are completely melted.

2. Add the egg, almond flour and salt. Mix until well combined. The dough must be very soft. If not, place in the microwave for another 30 seconds.

3. Roll the dough out thinly between two sheets of baking paper.

4. For the tomato sauce: Heat the olive oil in a large frying pan over medium heat. Fry the onion and the garlic until softened for 3–5 minutes.

5. Add the celery and fry for another 2 minutes. Add the whole tomatoes and tomato paste. Press the tomatoes to a finer consistenc­y with a fork.

6. Leave to simmer for 10 minutes to thicken. Add the basil and stir through.

7. In the meantime flash-fry the peppers in another pan in some oil, season with salt. Set aside until needed.

8. Heat a large baking tray over a fire in a kettle braai (like a Weber). Carefully lift the tray from the coals and transfer the dough on the baking paper to the baking tray. Peel off the top layer of baking paper.

9. Spread the tomato sauce over the dough, top with the cheese and other toppings. 10. Place back over the coals and braai for 15–20 minutes until cooked and golden. If you have a kettle braai you can cover it with the lid to create a pizza oven. Remove from the heat and top with rocket leaves.

'This is a delicious way to start a braai. Simply heat a baking sheet over the fire in a kettle braai and braai this pizza bread over the coals. Add any of your favourite toppings. You can also bake the pizza at 200°C in the oven.'
