One of the most important things to keep in mind when brewing is cleanliness. Yes, wherever you brew will be a mess, but you need to keep the beer clean, because all that sugary goodness is very appealing to microbes. Pediococcus, Lactobacillus and various wild yeasts would love to get in on that action, so as soon as your beer starts cooling down after its boil (which kills microbes), you’ll want to keep them out. Buy a R15 plastic spray bottle and a sanitiser – Iodophor is good – and spray anything that will come in contact with the beer or its container from then. In this case, more is more.
