Once the base is almost cooked, spread the tomato puree on top of the base. Sprinkle with cheese and add the other toppings. Turn the Skottel off, cover with foil and allow to bake for 5 minutes or until the cheese has melted and the toppings are just cooked. Remove the foil, place the Skottel on low and cook for a further minute to crisp.

TO SERVE

Slide the pizza on to a board, cut into slices, top with fresh basil and season to taste. If you’ve got one handy, crisp up the cheese with a small blowtorch.
