For the caramelise­d onions, heat the oil over low heat and fry the onions until golden and caramelise­d, for about 20 minutes. Add the sugar and balsamic vinegar, and cook while stirring for another 5 minutes.

For the burger patties, place all the ingredient­s, except cheese, in a bowl and mix until combined. Use your hands to really mix the ingredient­s together for another 1–2 minutes, until everything is incorporat­ed into one mixture. Form the mixture into 4 large-sized patties – or 6 medium-sized, depending on your hunger levels. Lightly oil a frying- or griddle pan over medium heat, and then cook the burger patties for 5 minutes. Flip and cook for a further 2 minutes on the other side.

Place a slice of cheese on top of each burger patty, cover with a lid and cook until the cheese is melted and the patty is cooked to your liking.

To serve, mix the sriracha and mayonnaise together in a bowl and spread evenly over the bottom half of each roll. Top with lettuce, sun-dried tomatoes and a sizzling-hot burger patty.

Top it off with sliced pickles, a spoonful of caramelise­d onions and extra chilli for a little extra zing.
