For the caramelised onions, heat the oil over low heat and fry the onions until golden and caramelised, for about 20 minutes. Add the sugar and balsamic vinegar, and cook while stirring for another 5 minutes.
For the burger patties, place all the ingredients, except cheese, in a bowl and mix until combined. Use your hands to really mix the ingredients together for another 1–2 minutes, until everything is incorporated into one mixture. Form the mixture into 4 large-sized patties – or 6 medium-sized, depending on your hunger levels. Lightly oil a frying- or griddle pan over medium heat, and then cook the burger patties for 5 minutes. Flip and cook for a further 2 minutes on the other side.
Place a slice of cheese on top of each burger patty, cover with a lid and cook until the cheese is melted and the patty is cooked to your liking.
To serve, mix the sriracha and mayonnaise together in a bowl and spread evenly over the bottom half of each roll. Top with lettuce, sun-dried tomatoes and a sizzling-hot burger patty.
Top it off with sliced pickles, a spoonful of caramelised onions and extra chilli for a little extra zing.
