NUTRITIONAL VALUE?
While chickpeas are nutrient dense, rich in protein and fibre, and contain beneficial vitamins and minerals, aquafaba has little nutritional benefit. (Early research has revealed that a teaspoon contains about 3–5 calories.) But in spite of this, it’s still somewhat of a miracle ingredient. In addition to its binding properties, it’s a great substitute for those who are allergic to eggs, and it can reduce the risk of food-borne illnesses found in some raw egg whites.
