STEPS TO SUCCESS:

1 For the waffles, mix the coconut flour, coconut, cinnamon, sugar, psyllium husk, baking powder and baking soda together in a bowl.

2 Using a spatula, fold in the mashed banana, milk, water and vanilla essence until the batter is smooth.

3 Using an electric beater, whisk the aquafaba and cream of tartar together for 6 minutes, until stiff peaks form. Fold into the batter.

4 Preheat a waffle iron and spray 5 with non-stick cooking spray.

5 Spoon some of the batter on to the hot waffle iron and close. Cook until golden, then carefully remove. Continue until the batter is finished.

6 For the fried banana, melt the butter in a pan over medium-high heat and fry the bananas until caramelise­d, about 3 minutes a side.

7 To serve, top the waffles with peanut butter and fried banana.
