BANANA-SPLIT SHAKE

20 minutes + overnight freezing

What you’ll need: FOR THE SHAKE

2 large bananas, peeled and frozen overnight

2 tbsp cocoa powder

1 tbsp peanut butter

¼ cup soy or almond milk

½ tsp vanilla essence

2–4 pitted dried dates, chopped (optional)

FOR THE COCONUT WHIPPED CREAM

1 tin coconut milk, refrigerat­ed overnight

1 tsp honey

TO SERVE

1 ripe banana, peeled 1 tbsp cacao nibs

STEPS TO SUCCESS

1 For the shake, place the frozen bananas, cocoa powder, peanut butter and soy milk in a blender and blend until thick and creamy.

2 Add the vanilla and any extra milk to adjust to your desired thickness. Add the dates if you want some extra sweetness and blend again.

3 Store in the freezer while you whip the coconut cream.

4 For the coconut whipped cream, scoop the thick coconut cream into a bowl, leaving the water behind. Add the honey and beat until light and fluffy.

5 To serve, cut the banana lengthways into 4 slices.

6 Place 2 banana slices into 2 serving glasses and press them against the sides with a spoon.

7 Pour in the banana shake and top with coconut whipped cream and cacao nibs.
