PASTA TWISTS WITH SPINACH, TOMATO AND BALSAMIC

Preparatio­n: 5 minutes Cooking time: 15 minutes including pasta Serves: 3 to 4 2 cups uncooked pasta screws 40ml olive oil 1 clove garlic, crushed 1 - 2 green chillies, sliced 45ml balsamic vinegar 350g cocktail plum tomatoes, halved ½ tsp brown sugar 2 handfuls English baby spinach 1 disk feta cheese, crumbled into chunks 2-3 green spring onions, sliced 3-4 grinds of black pepper Salt Boil pasta as per cooking instructio­ns on packet. While paste is boiling, heat oil in a sauté pan. To a very hot pan, add in tomatoes, chillies and garlic. Give a quick stir. Add balsamic and sugar. Cook for 2 - 3 minutes, tossing every now and then. Remove from heat. Add mixture to the cooked pasta. Toss in spinach leaves, feta and spring onions. Season with black pepper. Add salt if desired.
