SWEETCORN BITES (SNACK)

1 tbs olive oil ¼ tsp mustard seeds ¼ tsp cumin seeds 15 -20 curry leaves 1-2 green chilli, finely sliced 3 cups sweet corn, sliced off the cob ½ cup red peppers, finely diced ½ cup green peppers, finely diced ½ tsp fine salt Freshly ground black pepper Fresh coriander to garnish Heat oil in a saucepan. Add mustard seeds, cumin, curry leaves and chillies to hot oil – seeds should pop and leaves splatter. Immediatel­y throw in corn and cook for 2 minutes on high heat. Lower heat, toss in red and green peppers. Cook for 8-10 minutes. Season with salt and a few grinds of black pepper. Garnish and serve. HOT TIP: Add more chillies

for extra heat.
