Sugar Beans Curry With Madumbes (Yams)

1 chopped onion

¼ tsp asafoetida (aids with digesting gaseous foods)

½ tsp jeera seeds

1 bay leaf

1 tsp turmeric

1 tsp dhania jeera powder 1 tsp ginger and garlic paste 1 tbs Bombay masala

1 tbs Kashmiri chilli powder 3 potatoes

3 madumbes

5 medium green bananas 1 sprig curry leaves

1 grated tomato

Salt to taste

2 cans sugar beans or 3-4 cups boiled sugar beans

1 tsp garam masala

Fry onion in little oil. Add asafoetida, jeera seeds and bay leaf. Add turmeric, dhania jeera powder, ginger and garlic paste, Bombay masala, Kashmiri chilli powder and braise for about 5 minutes. Add potatoes and madumbes peeled, cut in even pieces and steamed in the microwave for about 5 minutes (or until soft).

You can steam madumbes on the stove if you prefer. Add curry leaves, grated tomato and salt to taste.

Mix well with spices and cook on medium heat for about 5 minutes.

Add sugar beans and cook on medium heat until all the veggies are cooked through and gravy is thick.

Add water whenever necessary, a little at a time. Sprinkle with a tsp garam masala. Serve with puri, roti, rice and bread.
