Berry Smoothie

-

1 cup (250ml) raw cashew nuts soaked in water for 2 hours.

1 can coconut milk

½ cup (125ml) almond or soy milk

2 large ripe bananas – peeled, sliced and frozen

1½ cups (375ml) fresh or frozen blueberrie­s

5-6 tbs maple syrup

Fresh strawberri­es or other berries to garnish

Soak the cashew nuts in water for a minimum of 2 hours.

Drain the water after soaking. Peel and slice the bananas before freezing them.

Pop all the ingredient­s into a blender and blitz until smooth.

Serve along with fresh strawberri­es or berries of your choice.
